When you need an old “standby,” this is it!  Your basic fruit bar recipe with the hidden yumminess of tropical paradise in the middle. Although our Java Bite mangoes are great all alone as a snack, let them dress up your bars today.  Your family will love it!

Prep time: 30 minutes /Total time: 60 minutes

Ingredients:

  • 5 packages of Java Bite dried mangoes
  • 3/4c. softened butter 
  • 1 1/2c. instant Oatmeal 
  • 1 1/2c. flour 
  • 3/4c. brown sugar 
  • 1 tsp cinnamon 
  • 1/2t. salt 
  • 1/2t. baking soda
  • 1 egg
  • 2 c. water + 2 T
  • 2 T. cornstarch 
  • 1/4c. sugar
  • Sugar & cinnamon for over the top

Directions:

  1. Open 5 packages of Java Bite dried mangoes (approx. 2 c if cut up). Soak the whole mango slices in boiling water for 5 minutes. Pat dry on paper towels. Puree the cooked mango mixture in a blender or food processor.
  2. Meanwhile, place the softened butter, oatmeal, flour, brown sugar, cinnamon, salt and baking soda into a medium-sized bowl. Cut together with a pastry blender or 2 knives. Retain 1 1/2c. of the dry mixture for topping. The rest will be used for the crust.
  3. Beat 1 egg and stir into the crust mixture. Press the mixture into the bottom of a greased 9 X 13 inch pan.
  4. Put mango mixture into a sauce pan. Mix 2 T. of cornstarch into 2 T. of cold water. Stir the cornstarch mixture and 1/4c. of sugar into the cooked mango mixture. On medium heat, stir until mixture bubbles and thickens. 
  5. Spread mango mixture out on dinner plates to cool for 5 minutes. Gently spoon and spread the warm mixture over the pressed oatmeal crust. Sprinkle the retained 1 1/2c. of dry oatmeal mixture over the mango spread. 
  6. Sprinkle a sugar & cinnamon mixture over the top. 
  7. Bake at 350 degrees F. for 30 minutes. Delicious served with a dollop of whipped cream or a scoop of vanilla ice cream!
  8. Cut when cool. Store in an airtight container. The bars freeze well.
